My father-in-law celebrated his 82nd birthday last August 27 with a simple potluck lunch at home. Unfortunately, my husband missed the party because he left for a year of overseas job one week before celebration.
By the way, here is what I decided to share. Crispy Lemon Chicken which I cooked for the very first time as part of my food experiments. So happy that it was “sold out”.
Recipe
1 kg. Chicken Wing and/or Thighs (but for the party, I prepared 2kg)
1 pack of Japanese Bread Crumbs
1 cup of all-purpose floor
2 pcs eggs
1 pc medium size lemon
Salt and Pepper to taste
cooking oil
1. In a bowl marinate the chicken in lemon, salt and pepper. Set aside
2. Prepare a batter comprise of 1 cup flour and 2 pcs eggs.
3. Coat the chicken pieces in the flour mixture, then with bread crumbs
4. Deep fry until golden brown
Optional: Prepare mayonnaise with a dash of pepper as dip.
Note: You can adjust the amount of ingredients, as needed
